In a Nutshell
Intriguingly wild and spicy red from one of Italy's most interesting native grapes.
A complex, savoury nose with hints of tar, woodsmoke, dark fruit and tobacco from light, well-integrated oak. Good structure and weight, with great concentration of dark plum and sour cherry characters, balanced by fresh acidity and ripe easy tannins. Rich and brooding on the finish with dark chocolate, liquorice, white pepper and bittersweet fruit.
Traditional red wine vinification. Maceration on the skins for 8-10 days in stainless steel tanks. Maturation, partly in barriques and partly in oak barrels, for no more than 6 months so as to preserve freshness and fruit purity.
Cavit is a modern and forward-thinking co-operative group in the mountainous Trentino region of northeast Italy whose 11 cellars are responsible for 60% of the region’s wine production.
