In a Nutshell
Red fruit and figgy flavours dominate this sticky wine.
Deep purple red with a subtle garnet rim. Very clean on the nose with stewed black fruit, slight hints of carob bean and black olives. Full-bodied yet incredibly fresh on the palate, the Dulce is bursting with plum jam and dried fig flavours. A pleasant finish with a slight acidity keeps this sweet wine perfectly balanced.
After crushing, a long, cool maceration took place at 10 to 12°C to extract colour, aromas and the soft, sweet Monastrell tannins. Fermentation was stopped once the must reached 5-7% alcohol by volume by adding grape spirit. This ensured that residual sugar was left in the wine giving the lingering, sweet finish as well as the higher alcohol of a fortified wine. After fermentation, the wine was aged in French and American oak barrels for six months before bottling.
Based in Yecla, Bodegas Castaño is known for its huge efforts to promote one of Spain’s native varieties, Monastrell. Castaño symbolises the best of what southern Spain has to offer: robustly modern wines, with almost Syrah-like complexity, that over deliver in terms of value year after year.
