Tasting Notes

​Le Difese is a nod towards the indigenous varieties of the region combining the appealing Mediterranean characteristics of Sangiovese with the depth of Cabernet Sauvignon to make a delicious wine that is ready to be enjoyed from release.

Production Notes

The harvest, strictly manual, started at the beginning of September with Cabernet and finished with Sangiovese within the end of the month. Berries were carefully selected on the sorting table. The very gentle crushing and de- stemming of the clusters of grapes was followed by fermentation in temperature controlled stainless steel vats (between 29°-30° C, only using the vineyard’s native yeast). The maceration on the skins lasted 13 to 15 days for the Cabernet Sauvignon and about 15/18 days for Sangiovese. It was followed by pumpovers and délestages and the malolactic fermentation also took place in stainless steel vats. At the end of the malolactic fermentation, the wine is aged for 10 months in French oak barriques.

Within the estate of Tenuta San Guido, in the hills close to the Tuscan coast, between Livorno and Grosseto, are some beautiful, historical buildings, including the Castiglioncello di Bolgheri, a retreat which dates back to 780AD, and the Oratorio di San Guido, the 1803 church at the end of a classic Tuscan avenue of tall cypresses.
