Production Notes
Fermentation with natural yeasts for approximately 18 days. Aged in 30 hl oak barrels for a minimum of 4 years and 60 hl vitrified concrete jars. Production can be anywhere from 6,000 to 15,000 bottles a year dependent on the quality of the harvest.
