Old vines grown in the warm Mediterranean sunshine of the Languedoc, tempered by the altitude and the cooler nights thanks to elevation and proximity to the Pyrenees; ideal conditions for longer, slower ripening which results in a finer profile than Malbec grown in warmer climates. This old vine Malbec was sourced by Guillaume from the wild mountain landscape of the Aude and just a ‘drop’ of Malbec from the lower hills of Minervois is also added. The vineyards in the Aude are located up in the Pyrenees at 400m. Tempered by the altitude and the cooler nights thanks to elevation and proximity to the Pyrenees; ideal conditions for longer, slower ripening which results in a finer profile than Malbec grown in warmer climates. Malbec is one of the later harvested grapes and was picked in late September to ensure the optimal ripeness levels were achieved. The grapes underwent cool fermentation at the start of the process to maintain the freshest fruit characters before warming to 28 degrees.
