A small, limited parcel - get it while you can!
Intense and exotic aromas of citrus and stone fruit mingling with elderflower and nettle. The palate is complex with ripe peach and grapefruit balanced by herbal, floral characters. The finish is crisp and refreshingly long.
The grapes are specially selected from sites including the Riva di Vallarsa in the Leno Valley, Cimone on the slopes of Monte Bondone, and Stenico in the Giudicarie Valley. These plots are typically 550-700m above sea leavel, with vines 15-20 years old. The high altitudes, alpine climate and variety of mountain soils, combined with bunch-thinning to reduce yields (to around 65 hl/ha), give the wine its distinctive character. Following careful selection in the vineyard - the bunches are destalked and lightly crushed. The must is quickly cooled and left in contact with the skins for a few hours to extract aromas. The grapes are then gently pressed, and alcoholic fermentation takes place in stainless steel at a controlled temperature. The process is carried out as anaerobically as possible to prevent oxidation of the delicate grape aromas. The wine is left on the lees until bottling.
