In a Nutshell
A beautifully fresh and dry sparkling rosé.
Beautifully salmon pink in colour with a persistent mousse. Red berry characters on the nose and palate leading to a fresh, delicate and incisive finish. Delightful on a summer's day!
Grapes were hand-harvested at the start of September. Chardonnay grapes were soft pressed to yield the best portion of must - after decanting for 10-12 hours this goes into stainless steel tanks for fermentation. The red grapes are harvested early to maintain good acidity levels, and are vinified as for rosé wines. After stabilisation and clarification the wine undergoes a second fermentation (Charmat method).
