The supple, early drinking third wine of Tenuta San Guido
Le Difese is a nod towards the indigenous varieties of the region combining the appealing Mediterranean characteristics of Sangiovese with the depth of Cabernet Sauvignon. This 2017 vintage is surprisingly open and enjoyable already but will happily keep for a number of years if you're patient!
Selection of the bunches on a sorting table then soft pressing and destemming of the grapes. Primary fermentation takes place in stainless steel vats at controlled temperature (29-30 ° C) with no external yeasts. Maceration on the skins for 10-13 days for the Cabernet Sauvignon and for about 13-15 days for the Sangiovese, with
successive phases of pumping over and délestage aimed at softening the tannic component. Malolactic fermentation in steel. At the end of the malolactic fermentation the wine is aged for about 8 months in oak barriques.
Tenuta San Guido
Within the estate of Tenuta San Guido, in the hills close to the Tuscan coast, between Livorno and Grosseto, are some beautiful, historical buildings, including the Castiglioncello di Bolgheri, a retreat which dates back to 780AD, and the Oratorio di San Guido, the 1803 church at the end of a classic Tuscan avenue of tall cypresses.
