Production Notes
The grapes were harvested in small bins and gently pressed off to steel tanks where the must was allowed to ferment at a controlled temperature of 19°C, without malolactic conversion to retain the crisp palate. 80% of the wine was aged in stainless steel and 20% in large oak casks of 30 to 40 hectolitres, imparting subtle oak complexity.
