Maceration and fermentation took place in 500 litre temperature controlled stainless-steel vats. The must was macerated on the skins over a period of four to five days at a temperature of 24-26°C. The wine then remained on its lees for a month before bottling.

The Borgo Selene wines are made and blended by Alberto Antonini at the Curatolo Arini family winery. ‘Borgo Selene’ takes its name from the Greek goddess of the moon, illustrating the influence that the Greeks, who brought the vine to Sicily, have had on the Mediterranean’s largest island.
The white, a blend of the native Catarratto and Inzolia varieties, is lifted, fresh and generous, while the red, from Nero d‘Avola and Nerello Mascalese, has surprising depth at this price.
