Production Notes
The grapes are mechanically harvested at night. They are de-stemmed and then undergo a traditional vinification: daily pumping over to extract the colour, tannins and aromas. Fermentation lasts around 2 weeks before running-off, racking and pressing. Maturation is carried out in concrete tanks.
