Production Notes

Upon arrival in the cellar, selected clusters were destemmed and gently crushed. Fermentation and maceration on the skins took place in temperature controlled stainless steel tanks for approximately 10 to 15 days at a temperature of 28-30 °C (82-86 °F). A portion of the Merlot and Syrah musts were kept at lower temperatures during fermentation to better preserve each grape variety’s distinctive aromas. Malolactic fermentation took place both in barriques and in stainless steel tanks and was completed by the end of the year for all grape varieties. Subsequently, Cabernet Sauvignon was blended with Merlot, Syrah, and a small percentage of Cabernet Franc and Petit Verdot: the blend was reintroduced into barriques where it was left to age before bottling.

Producer Information

Situated in Maremma on the Tuscan coast, sixty miles southwest of Florence, the Guado al Tasso estate extends from the green hills surrounding the old village of Bolgheri down to the sea. This beautiful plain is called the ‘anfiteatro Bolgherese’ due to the fact that the hills enclose the plains overlooking the sea to form a natural amphitheatre. The Bolgheri DOC started out as rosé-only; whites were permitted in 1984, and ten years later the laws finally recognized the extraordinary success of the mould-breaking Cabernet-based reds. From the 2007 vintage, Cabernet Franc has entered the picture, both as an exceptional blending component for Guado al Tasso, and also as limited-edition single-variety bottling called Matarocchio.
