The grapes were hand harvested. After a lengthy maceration on the skins, fermentation took place at controlled temperatures. The wine was then aged for 18 months in oak and then a further 18 months in bottle before release.

Professore Antonio Bevilacqua is an engineer by profession and has a very successful business, based in Palermo and Milan, that ensures he travels the world. He is very proud of his Sicilian origins, and in 2007 he decided to start buying land in Etna with a view to producing the best wines possible. Today, his daughter Alessia manages the 35 hectares of vineyard with another 20 that they rent and manage, all situated at an altitude between 600 and 900 metres above sea level. This altitude ensures warm days and cool nights, while the volcanic soil is low vigour, ensuring wines of great intensity and a lovely perfume from low-yielding vines.
His consultant oenologist is Riccardo Cotarella, who has successfully managed to marry the delicate intensity of the wines from Etna with a freshness and definition that few others have achieved. Although the majority of the vineyards are planted with Nerello Mascalese, there is a little bit of Nerello Capuccio grown to leaven the tannins of the Mascalese.
Their outstanding wine is ‘Cirneco’. Made solely from Nerello Mascalese, it is scented and fresh, the oak adding to the texture on the palate without detracting from the delicate yet dynamic fruit. These are wonderful wines from one of Italy’s stars of the future.
